If that's not your bag then check out a tour to the famous little town of Nimbin (a Rastafarians heaven on earth). 

Byron Bay is also famous for it's dolphin and whale watching activity, where you can view all from the lighthouse (Australia's most easterly point), or jump in a sea kayak and paddle out amongst them. Whatever your choice you will come away with a smile from ear to ear.
